Abstract

Obesity is a health concern associated with an increased risk of cardiovascular disease, metabolic disease, and obstructive sleep apnea. Obesity has doubled in rate since 1980, and lifestyle modification is a cornerstone treatment for overweight and obesity. Research supports a low carbohydrate diet as a method for weight management and reduces obesity-related preventable diseases. This quality improvement project explored an online, low-carbohydrate dietary education intervention to improve weight in adults who are overweight or obese. The sample size was 11 adult women, with four completing the project. Ten women had a body mass index of 30 and higher, and one had a body mass of 24. Weight, level of dietary knowledge, carbohydrate intake, and physical activity were examined as the outcomes. The results showed weight reduction in all four participants who each consumed 30 to 120 grams of carbohydrates per day at three months. Improvement in dietary knowledge and increased physical activity two to three times a week occurred with the four participants. A low-carbohydrate diet can be an alternative approach to weight management.
