Abstract
"Preservation of food has been practiced through the ages to save the seasonal surplus for future use or the annual surplus for use in deficit years. During the development of civilizations, various food preservation methods have facilitated the distribution and use of food. In more recent times, various preservation methods have been employed to produce specific types of food products for specific needs. Food deterioration was recognized as a major problem in early civilizations, but preservation methods were lacking. Results from contemporary research have shown that food deterioration may occur during storage due to microbial growth, enzymatic activity and through oxidative changes."--Introduction.
